Ingredients
- 2 cups (470 ml) Rice Long grain white rice is traditional, but basmati rice can also be used for its fragrant aroma.
- 1 large, or 2 cups (470 ml) of canned coconut milk Coconut (Cocos nucifera) If using a fresh coconut, you'll need to crack it open and grate the interior.
- 1 cup (235 ml), diced Bell peppers (Capsicum) A mixture of red and green peppers provides a vibrant contrast.
- 1 medium, diced Onion (Allium cepa) White onions are traditional but red onions can be used for a sweeter flavour.
- 2 tablespoons (30 ml) Vegetable oil Palm oil can be used for a more authentic taste.
- To taste Salt Sea salt is often used in coastal West Africa.
- 2-3 Garlic cloves Minced garlic brings out more flavour
- 1 cup Chicken or beef stock
- 2 pieces Scotch bonnet
- Depending on your preference Protein of choice
